Ellison Bakery - A humble beginning
Ellison Bakery was started by Don Ellis in 1945 as a one-man operation in the family garage in Fort Wayne, Indiana. Don baked, sold, produced and delivered high-quality retail baked goods to restaurants and grocers throughout the area. Don was a visionary who turned his love for fine quality baked goods into a food service business, and one of the finest family-owned bakeries in the area that is still thriving 64 years later.
In addition to a variety of rich, delicious cookies, Ellison Bakery also produces cookie-based products, including ice cream sandwich wafers and crunch toppings, for the institutional, fund-raising and ice cream industries.
From the beginning, Ellison wanted the bakery to be one of the highest quality family-owned bakeries in Indiana. Our family takes great pride in our products and we constantly seek to ensure the highest standards of quality in all of our products and business practices.
Today, Ellison Bakery is still a family-owned and managed Indiana Bakery that continues to flourish. Our homestyle bakery has thrived throughout the decades due to our families’ love for, and dedication to, our product, our customers and our reputation.

- At Ellison Bakery, we take pride in our heritage, our history and our family name. Making cookies in our homestyle bakery is much more than just a job… it’s our passion! While some people may have been born with silver spoons in their mouths, we like to think we were born with wooden spoons in our hands! Our tried and true recipes have been passed down and allow us to deliver the best cookies that we can to our customers... from our family to yours.
- Unlike big, institutional cookie companies, our business practices, as well as our recipes, are based on time honored values and cherished family memories that have been instilled within our Indiana Bakery for over 6-½ decades.

Our family grows with each person we hire, so that makes our employees our most important company assets.
- We support our community as a company and as individuals. Ellison Bakery sponsors youth hockey and Little League baseball teams annually. In addition, our employees have been active participants in the United Way Campaign of Allen County and strong supporters of the Community Harvest Food Bank, Goodwill Industries of Northeast Indiana and the U.S. Marine Corps Toys for Tots program.
